Executive Chef Executive Chef Full Time The Ranch Country Club | Denver, CO (80234) YESTERDAY GENERAL REQUIREMENTS The Executive Chef is responsible for overseeing the daily culinary operations including that used for restaurants, banquets, and other related services at the Club. Responsible for planning and implementing budgets, hiring, training, and supervising support staff, applies relevant marketing principles to assure that the standards of the Club are met. Resolves issues and communicates concerns/disputes with management in a timely manner. Executive Chef is neat and well-groomed in accordance with the dress code communicated by the Department Head. Possess an eagerness to provide excellent service; self-motivated, works with minimal supervision and interacts with members/guests at a high-level of professionalism. Exhibits a desire to create a high quality, pleasant, and memorable dining experience for members and guest. SKILLS REQUIREMENTS  Plans menus for all food outlets in the Club  Schedules and coordinates the work of chef’s, cook’s, and other kitchen employees to assure that food preparation is economical and technically correct meeting budgeted labor cost goals  Approves the requisition of products and other necessary food supplies  Ensures that high standards of sanitation, cleanliness, and safety are maintained at all times  Establishes controls to minimize food and supply waste and theft  Implements a training program to ensure safeguarding of all food preparation by employees   Trains employees on principles related to safety, sanitation, and accident prevention  Develops standard recipes and techniques for food preparation and presentation ensuring high consistent high quality standards are met  Minimizes food costs; exercises portion control and assists in establishing menu price points  Prepares necessary data for applicable parts of the budget; projects annual food, labor and other costs  Monitors actual financial results; takes corrective action as necessary to meet financial goals  Attends Food and Beverage (F&B) staff and management meetings  Consults with F&B Department Head on special event planning   Cooks or directly supervises the cooking of items that require skillful preparation  Ensures proper staffing for productivity and quality meet Club standards  Evaluates food products to ensure quality standards are consistently attained  Controls food and payroll costs to achieve maximum profitability  Interacts with food and beverage management to ensure that food production consistently exceeds the expectations of members and guests  Works in conjunction with food and beverage team, assists in maintaining a high level of service principles in accordance with establish Club standards  Helps develop wine lists and bottle/glass wine sales promotion programs  Evaluates products to verify that quality, price, and related goods are consistently met  Develops policies and procedures to enhance and measure quality; continually updating written policies and procedures to reflect state-of-the-art techniques, equipment and terminology  Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment  Provides training and professional development opportunities for all kitchen staff  Periodically visits the dining area when open welcoming members and guests; handles member complaints in accordance with Club policies and procedures  Researches new products and develops an analysis of the cost/profit benefits  Ability to work at a rapid pace while maintaining attention to detail  Excellent communication skills  Time management skills  Skilled in establishing and maintaining effective working relationships with staff  Team oriented  Strong interpersonal skills   Management abilities to oversee kitchen personnel  Exhibits the drive to provide exceptional Member service  Tolerates pressure and works calmly and efficiently during busy times  Ability to multitask  Ability to read and interpret documents such as organizational procedures, policies, safety rules, and ma YESTERDAY
